Edward Sandoval's Chiroso lot from Tolima is the most delicate thing on the bench. At light roast it opens with fragrant raw sugar — panela, demerara — giving way to floral tea, bright juicy acidity, and layers of dried mango, cherry, and hibiscus. The kind of complexity that takes a full cup to fully unfold.
